Recipe Tips:

FAQs

What is the secret to making cookies soft and chewy? ›

Cornstarch helps product soft and thick cookies. Using more brown sugar than white sugar results in a moister, softer cookie. An extra egg yolk increases chewiness. Rolling the cookie dough balls to be tall and lumpy instead of wide and smooth gives the cookies a bakery-style textured thickness.

What makes a cookie chewy and not cakey? ›

White sugar creates crispier cookies and brown sugar creates chewier cookies. Why use melted butter? Melted butter creates cookies with a different texture compared to cookies made with softened or creamed butter. When butter is melted, it coats the flour more evenly, resulting in cookies that are chewier and denser.

Why are my red velvet cookies brown? ›

If you skip the food coloring, the cookies will be light brown. For the pictured cookies, I use 3/4 teaspoon gel food coloring. You can control how vibrant the red color is, so use more or less depending on the color you'd like. You can find gel food coloring in craft stores, some grocery stores, or online.

What is the best topping for red velvet cookies? ›

Should I use baking soda or baking powder in cookies? ›

Since baking powder is comprised of a number of ingredients (baking soda, cream of tartar, cornstarch, etc.), using it instead of pure baking soda will affect the taste of your cookies.

What are three factors that contribute to a chewy cookie? ›

The ingredients you use and how you shape your cookies both play an important role in whether your cookies turn out crispy or chewy. The type of flour and sugar you use, if your cookie dough contains eggs, and whether you use melted or softened butter all factor into the crispy-chewy equation, too.

Does melting butter make cookies chewy? ›

For chewier cookies and bars, we melt our butter instead of following the usual procedure of creaming softened butter with sugar. This simple switch frees up the water content of the butter so that it can freely interact with the flour in the dough or batter.

What does brown sugar do in cookies? ›

Brown sugar, meanwhile, is dense and compacts easily, creating fewer air pockets during creaming—that means that there's less opportunity to entrap gas, creating cookies that rise less and spread more. With less moisture escaping via steam, they also stay moist and chewy.

How to make red velvet more red? ›

The trick to using our Red Velvet Color when baking cakes and cupcakes is to lower the pH. Some ways to do this is by substituting baking powder in place of baking soda, using a natural non-alkalized cocoa powder, adding more white vinegar or buttermilk to your red velvet recipe, to achieve a bright red color.

What makes red velvet flavor? ›

Red velvet cake is a Southern American delight that blends a vanilla cake with a striking red hue from food coloring, mixed with several tablespoons of cocoa powder.

Why are red velvet cookies good? ›

Here's a few reasons why I love these cookies: A delicious twist on the classic red velvet cake. All the classic flavor of red velvet cake in cookie form. The mild chocolate flavor with hints of vanilla simply melts in your mouth.

What Flavour compliments red velvet? ›

Cream cheese frosting is the classic choice for red velvet cake! Its tangy flavor complements the sweetness of the cake layers. If you'd prefer something more sturdy or want to make special cake decorations, opt for my Best Buttercream instead.

What is the best sugar for topping cookies? ›

Because of its fine consistency, confectioners' sugar dissolves easily and is used for icings, frostings, and glazes. It can also be sifted over baked goods as a finishing touch (though our preference for that is actually non-melting sugar — see more below!).

What determines the moistness of a cookie? ›

Water in the butter will aid in leavening the cookie during baking and any remaining water after baking will contribute to moistness in the cookie's texture. The higher butter cookie has slightly more spread than the low butter and control. The biggest difference is in the flavor and mouthfeel of the cookie.

How to make cookie dough more moist? ›

There are a few things you can do to add liquid to your cookie dough if it is too dry and crumbly. One option is to add milk, water, or another liquid until the dough is the right consistency. You can also try adding melted butter or shortening. If your dough is still too dry, you may need to add more flour.
