Growing up, my Mom always made this delicious savory dish called Porcupine Meatballs. When my friends asked me what I was having for dinner on nights that we ate these, they always gave the most horrendous faces when I said the name.

"You mean, like.....you're eating PORCUPINE???"

Oh, my friends were the silliest. But growing up where I did, I wouldn't put it past some people to actually eat the prickly animal.

Don't worry, though, this delightful little meal is made from ground beef. So, give it a whirl and shock your family when you proclaim you are having Porcupine Meatballs for supper! :)

This is definitely a comfort food for me as it reminds me of my childhood. It's oh so delicious!

A Recipe: Porcupine Meatballs. (1)

Porcupine Meatballs

1 pound lean ground beef
2/3 cup long-grain rice, uncooked
1/2 cup water
1/4 cup finely chopped onion
seasoned salt
garlic powder
chili powder
pepper
1 large can (15 ounces) tomato sauce
1 cup water
2 teaspoons Worcestershire sauce

Mix ground beef with rice, 1/2 cup of water, chopped onion, seasoned salt, garlic powder, and pepper. Use seasonings as desired. Shape porcupine ground beef mixture by tablespoon into 1 1/2-inch balls.

Place the porcupine meatballs in an ungreased 2-quart shallow baking dish. Mix the remaining ingredients and pour over the porcupine meatballs. Cover and bake at 350° F. oven for about 45 minutes. Uncover and bake porcupine meatballs 15 to 20 minutes longer.

Serves 4 to 6.

    Now, if you stuffed them into green peppers you would have pigeon's!! It's a polish dish, very yummy and served with mashed potatoes!

    That looks SOOOOO good!! I cannot make good meatballs to save my life, but spaghetti is my favorite meals. These look delicious. Thanks for sharing! I love the name too :)

    My husband's grandmother (who recently passed away) used to make this for him. In fact, she made it for us the first time I met her. I'll have to whip these up as a surprise for my husband!

    I've made these before, but apparently with the wrong rice! I tried your recipe yesterday (scrumptious, by the way) with jasmine rice, and the finished product looked like spiny porcupines! Served with twice-baked potatoes, it was an amazing meal. Thanks for sharing!

    Sounds yummy! I just made meatballs last week. I need to find a substitute for Worcestershire sauce. I can't have that, but I think I could tweak this recipe to fit my diet. Hip! Hip! Hooray! Oh, and I'm just getting caught up on posts. I loved your post on communication. Loved it. So very true, and something that has always bothered me, too.
